Recipe: Earl Grey Shortbread Cookies

Earl Grey Shortbread Cookies

  • 2 cups all purpose flour

  • 2 tbl loose earl grey tea leaves

  • 1/2 tsp salt

  • 3/4 cup confectioners sugar (or 1/2 cup sugar, 1/4 cup powdered sugar)

  • 1 tsp vanilla extract

  • 1 cup (2 sticks) unsalted butter, room temperature

In a food processor, pulse together flour, tea and salt until the tea is fully incorporated. Add in sugar, vanilla and butter. Pulse together just until a dough forms. Place the dough on a sheet of wax paper (can use cling wrap if necessary, but I find it sticks too much) and roll into a log roughly 2 1/2" thick. Place in refrigerator for 30 minutes.
Preheat oven to 375*F.
With a sharp knife, cut dough into 1/3" thick slices. Lay out slices on a silpat-lined baking sheet (cookies will spread a little, but not a whole lot). Bake for 12 minutes, or until the edges turn just brown. Let sit on the baking sheet for 5 minutes before removing to a cooling rack. Store in an airtight container. Makes 24 cookies.
